Ingredients:
- 1/4 cup butter, room temp.
- 2 tsp chopped parsley
- 2 garlic cloves, minced
- 1 tbsp ground peppercorns
- 1 lemon, zested and quartered
- 2 tbsp olive oil
- 4 swordfish steaks, 1 inch thick
Directions:
Step 1: Preheat oven to 400°F. Mix butter, parsley, garlic, half of the peppercorns, and lemon zest in a small bowl. Season with salt to taste.
Step 2: Heat oil in large ovenproof skillet (cast iron works great) over medium-high heat. Sprinkle steaks with salt and remaining peppercorns. Add swordfish to skillet and cook until brown and crispy, about 3 minutes. Flip steaks and transfer to the oven.
Step 3: Roast steaks until just cooked through, about 8 minutes. Transfer to plates.
Step 4: Add butter mixture to the same skillet. Scrape up any browned bits and once all the butter has melted, drizzle over your steaks. Serve hot and enjoy!
