- 1 1/2 lbs. grouper
- 2 tbsp softened unsalted butter
- 2-3 tbsp key lime juice
- 1 tbsp key lime zest (1 lime)
- salt and pepper to taste
Step 1: Preheat grill to medium high heat. Make sure the grill is properly heated before throwing the fillets on to be sure you get those coveted grill marks.
Step 2: Combine the lime juice and zest with the softened butter. Mix until smooth and then use about 3/4 of this to brush each grouper fillet and season to taste with salt and pepper.
Step 3: Grill fillets until cooked, approximately 6 minutes per side. Once finished, place on a serving dish and brush with remaining butter. Serve with lime wedges and enjoy!
