"Catch of the Month" November Recipe - Grilled Wahoo w/ Tomatoes & Olives


  • 2 lbs. wahoo fillets
  • 2 tbsp. olive oil
  • salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 14.5 oz. can fire-roasted diced tomatoes
  • 1/2 cup kalamata olives, pitted & diced
  • 1/2 cup manzanilla olives, pitted & diced


Step 1: Heat grill or grill pan to medium high.  Brush the wahoo filets with 1 tbsp. olive oil and season with salt & pepper.

Step 2: Place fish on grill and immediately turn heat to low, cover. Cook about 4 to 6 minutes per side until done. While the fish is cooking, heat remaining olive oil in a large sauté pan over medium heat and add garlic.

Step 3: Add tomatoes and olives to the heated sauté pan and cook until heated through.  Plate the fish and spoon the tomato & olive mixture over it. Serve immediately and enjoy!
