Ingredients
Salsa:
- ½ large red onion
- 2 cups mango chunks
- 3 scallions, diced
- 1 medium red bell pepper, diced
- ½ cup cilantro, roughly chopped
- 1 jalapeno, diced
- 1 lime, juiced
- 1 lemon, juiced
- Salt to taste
Wahoo:
- 4, 4 oz Wahoo filets
- 2 tbsp avocado oil (or similar oil)
- Salt & pepper to taste
Directions:
Step 1: Combine salsa ingredients in a mixing bowl and chill for at least 1 hour
Step 2: Dry wahoo filets completely and sprinkle both sides with salt and pepper
Step 3: Heat oil in a skillet over medium high heat
Step 4: When the oil is shimmering, add the filets and cook for 4 minutes. Be sure to space them out adequately and do not move until ready to flip.
Step 5: Cook for an additional 4 minutes and check for doneness. Additional time may be needed depending on the thickness of your filets.
Step 6: Transfer cooked wahoo to plates and top with mango salsa, add flaky salt to taste and enjoy!
